Deviation Distilling is a gin distillery that recently relocated their tasting room to downtown Denver’s historic DairyBlock. From using unique ingredients in order to capture distinct flavors, to designing beautiful bottles, Deviation Distilling celebrates both the artistic and scientific side of the distilling process. While the distillery itself, isn't located within Dairy Block, the tasting room is meant to be an extension of the distillery, capturing both the industrial grittiness and creativity of distilling.
The two-level existing tenant space already featured some key design elements such as original brickwork and exposed wooden beams, which pay homage to the historic site of the building. In an effort to preserve much of the history of the existing building, we let these elements inform other design decisions. By using finishes such as copperon the bar top, painted steel pipes surrounding the stairs, reclaimed wood at the bar soffit, and old charred whiskey barrels which were pulled apart andreassembled to create the bar front, we created a raw backdrop that is juxtaposed by the bright and rich colors found in the gin bottles on display throughout the bar.
Another key design feature andperhaps the most intricate design element is a custom light fixture made out of 275 of Deviation Distilling's empty gin bottles and 89 hanging Edison lightbulbs. The idea for the fixture came from the hope that patrons of the bar would be drawn to exploring the entirety of the space, from the intimate round booths found on the upper level to the exterior patio made accessible by two existing overhead doors. The light fixture which spans throughout the entire space promotes a sense of exploration as the eye follows the areas of dense concentration and expansion of both bottles and lights. When we had the idea for this fixture, we knew it was a stretch to bring it to life due to budget constraints. With the help of a local lighting company, Color Cord, our team was able to design and install the light fixture, by calculating the cord length of each bottle and light bulb, in order to create the desired pattern. We then installed the bulbs and bottles from a hanging grid that covers the majority of the ceiling, taking into account height changes to accommodate ductwork and pipes.
